Some of the 2002 to 2008 Canadian pennies I have do not stick to a magnet. Some do. Do they have different compositions in those years?

Yep, some are copper coated zinc. All the ones that stick to a magnet should also have a "P" on the front, standing for plated steel. Since they started adding the "privy mark", I'm not so sure about the composition.

I can have two pennies from the same year and one will stick to the magnet and the other will not. And this is for at least two different series of years. Weird.

I have seen both the magnetic and non-magnetic for 2002 thru 2006.

I have not yet seen any non-magnetic 2007 or 2008. I haven't seen any 2009 of either yet.

anyone seen non-magnetics for 2007 and 2008? (or 2009?)

As an aside the "scarcest" from my experience so far is the 2003 non-magnetic

Yup the RCM used both plated steel and zinc core pennies. The first Plated coins were in 2000 and they claim it is pretty cutting edge technology. I saw it in action in Winnipeg and I have to agree. It took some years (and a building expansion) to get to the capacity able to do all coins Plated. I think all M mint mark coins are steel core.

In 2006 the Canadian cent came in 4 flavors.

An unmarked Zn.
A Zn with the M mint mark.
An Fe with the "p" to designate it was plated.
And an Fe with the M mint mark.

The rare one is the Fe with the "p" mark. As far as I know, all '07 and newer are Fe, no Zn.
