I'm sure they are all some type of surgical stainless steel. Some with higher alloy content are less magnetic. Stainless flatwear is an example of highly magnetic stainless steel. So are modern Canadian coins.
If these are antique dental tools, they are most likely worth far more than scrap value. Even if they are not antiques, they may be worth selling as dental tools rather than scrap. Check ebay.
