Do any of you keep S-mint's and Wheat cents that you find septerate from the rest of your pennies? Do they command a higher premium. So far I have only found a few of each, less than 1% I would say. Is that about the norm?

Yes they do command a higher premium. S wheats are specially rare along with pre 1940 wheats.
I would say it depends on which side of the country you live on as to what your percentage is on S cents. I hear of people living close to San Fran that find them regularly. i personally keep all S minted cents and wheats i get from roll searching
The S mints are not common even close to the SF mint. They only produced them for a few years and mintages were low. An anlysis I did a while back yielded 5-7% S mint cents out of entire bags of copper. Though they would have a higher market value I can't justify sorting them out of the bulk copper for any increase in premium. If I were hand sorting I certainly keep them seperate.
If your percentages are low.. just sort more. If your percentages are high.. just sort more.

I keep all 68-74 S-mints and wheats seperate from the rest of the copper. I even go as far as keeping all BU condition 59's and early to mid 60's. I've found a lot of early date memorials in BU condition lately. I've also noticed that S-mints are more rare than common wheats in my boxes sorted on the east coast. I've found so far three indentical looking 1968-S mints in BU condition in three seperate boxes from two different banks, me thinks someone unloaded a few rolls of uncirculated 1968-S into circulation around here.
I perosnally dont take the time to search for S mints. I do take the time to search for wheats though. Average common date wheats sell for 4-5 cents right now
