I just got another shipment of banana chips from BulkFoods.com, and I figure 140 lbs. should last me a while (although I only got 42 lbs. today ). I'm running low on mylar bags at the moment, so I decided to see how many quart-sized mason jars it would take--53, to be exact. Actually, it was 18 for the first 14-lb. box, 18 for the second box and 17 for the third box, which looked like it had gotten shaken up a bit--lots of crumbs, but just as tasty. My banana stash will be a nice addition to my 500 lbs. of oatmeal.

Are they high carbs?
is there a lot of sugar in them?
do they taste like a banana?
are they hard or soft?

They are not very good when not sweetened, so there is a fair amount of sugar added. They taste somewhat like bananas, but a little different. They are hard and brittle. |

I store large quantities of what I normally eat, although the modifications I've made with my food preps versus my "normal" diet are just intended to simplify things in a SHTF scenario. For example, I love all kinds of vegetables, especially spinach, carrots and tomatoes, all of which are packed with vitamin A and other nutrients. For high-sugar foods such as tomatoes, it's a lot easier to order them in bulk from various companies (I got my banana chips from BulkFoods.com and I'm about to order 50 lbs. of tomato powder from them) than to dehydrate them on a consumer-grade dehydrator because the sugar content from such foods really, really gums up the dehydrator trays.
So I then take my dehydrated vegetables and, depending on what I'm in the mood for, various spices and beans, plus possibly chicken or fish (I have a lot of canned mackerel):
Add rice, cook everything up and you've got literally thousands of possible soup recipes. I think soup is about the simplest dish in the world, but it doesn't have to be boring. And in a SHTF situation, soup will raise fewer eyebrows than, say, steak. But you can pack the soup with as many ingredients as you want, or you can reduce the water content of the soup and make it more like a stew--the only real limit is your imagination. I need to dig up a few PDF files I have on my old laptop that have a few thousand soup recipes on them and post links to the files.
As for water, I've only got about 20 gallons of bottled water right now because of space constraints, but in a pinch that will get me through 2 to 3 weeks. As soon as my fiancee and I get the details settled on a house, we're going to have a huge basement with plenty of out-of-sight storage space. Near the top of my to-do list is a water purification system and supplies. I've got a couple gallons of (unscented) bleach, but I also need to pick up some iodine tablets. |

Jon, how was your weight yield after you dehydrated the bananas? My BulkFoods.com invoice for 42 lbs. of banana chips came to just $83.93 shipped ($5 shipping on orders over $75). I'd think that'd be a really hard price to match with bananas, considering that even at 29 cents per pound, your gross weight included the peels. |

Honestly didn't weight the bananas after dehydration. I can tell you that unlike many things that have spent their due time in the Nesco, the bananas don't reduce by the same typical ratios. It was an enjoyable experience and was able to get my daughter involved and help her understand the purpose and reason for doing it. Now days, instead of some overly processed sugary goo inside of a cartoon character laiden container, she is seen with a snack bag of home dried bananas, strawberries, and almonds which makes me smile  Also didn't care much for all the oil etc they processors laquer on banana chips. |

| I hope you dont have many mosquitos near you. They love to bite after you eat a banana. That was always a good trick to play on someone when living in the bush. Bring a banana with you and feed let another person eat it. No need for bug dope:) |

Actually, I'm having to scale down further food preps until after I get moved because of space constraints! I'm currently in an efficiency apartment, and I've hit the absolute space limit in the large wrap-around closet where I have most of my preps at the moment. I'm going to rent a storage space before I move and put some of my food preps there temporarily before I finalize things on a house. It's a good problem to have, IMO. |
